Dinner
Leaving our dome at Clear Sky Resorts in Cannonville, Utah, my husband drove us to Sky Nova, the property’s restaurant.
As we walked in, I let out an audible gasp. At 28′, Sky Nova is the tallest glass dome in the United States. It was our dome on steroids!
Giving the host our name and reservation time, he asked if we wanted to sit by the windows. Um . . . YES, PLEASE!!! Walking to our table, we passed a woman singing and playing guitar.
Once we met our server, Gabe, and ordered our drinks, I had a chance to really look around. It was only then that I realized the space theme of the resort. All the chairs were right out of Star Trek, the plates and silverware were a rich blue, and the knives all had the same telescope on them as our towels in our dome. There was even a robot, although it must have been on a break, never moving from its spot near the door.
I kept looking up. I kept looking out.
When Gabe returned with our beverages, a pale ale for Mister Rain and a strawberry aperol spritz for me, I asked him if he was from the area. He was not, he had been living here for about eight months, hailing originally from Minnesota.
Since I had eaten a big lunch right before we arrived at Clear Sky, I ordered a small pizza form the kids menu, my husband had gnocchi. For dessert he had coffee and cheesecake with lavender icing and a berry compote while I had a second strawberry aperol spritz and chocolate moose, my own take on a chocolate covered strawberry.
Evening progressed and the lighting around the large bar in the center of the dome came on, its design giving full-on spacecraft. As massive as this dome is, the illumination cast a coziness across the restaurant.
Breakfast
The next morning we returned to Sky Nova. This time upon entering, I immediately noticed the drapes were mostly closed because of the already scorching sun. Mister Rain and I had wondered why the restaurant isn’t open for lunch, now it made perfect sense. If it was hot at 8:30 am, what must the heat of the day be like?
Now that I was slightly less awestruck than the night before, I asked my husband what was along the one curved wall. It was a coffee and ice cream bar.
We both ordered regular coffee and I had a short stack of pancakes with a side of extra crispy bacon. When the “side” arrived, it filled an entire plate. Mister Rain got a cheddar jack omelet.
Outside Sky Nova were tables where you could eat al fresco – would you like SPF 1000 with your eggs? – as well as a cornhole game and a fire pit. On either side of the large Sky Nova dome was a smaller dome, one housed the front desk and gift shop, the other the kitchen.
Driving back to our dome after breakfast, we took a picture of the restaurant from the resort’s road. It was startling to see the giant dome in the desert environment, but its exterior appearance did not do the interior’s size justice.
I am so glad we went to Sky Nova for both dinner then breakfast the following day. The food was excellent and the ambience out of this world.
But what happened in between these two meals was one of the most remarkable nights of my life.
